Let me premise this post by saying: I'm neither a very good nor very creative cook. I do NOT have a very advanced palette so I like to stick with simple recipes with simple ingredients and simple instructions. I like things that are fast and that won't take hours to clean up afterwards. (How lazy am I, right?)
That said, here is a recipe I found and actually really, really enjoyed:
Moroccan Chicken
1 tsp. ground cumin (I have this in my cupboard only because of Rachael Ray...love her.)
1/2 tsp. kosher salt (again, R.R.)
1/4 tsp. ground cinnamon (love you, gram)
4 skinless, boneless chicken breast halves
1 tbsp olive (or vegetable) oil
Paprika - optional
Stir together cumin, salt and cinnamon then sprinkle over the chicken. Heat the oil in a large skillet over medium heat. Add the chicken and cook about 8-12 minutes or until done, turning once. Sprinkle w/paprika if you have it on hand.
Serve w/couscous, brown rice or even over a leafy spinach salad.

This is my kind of recipe. :) I'm with you, I'm not a good or creative cook and love to stick to simple things. I don't think it's lazy. You just want to spend your time doing something else, like walk to London. :)
Besides, you have kids! You don't have time to be lazy! ;)
I will try the recipe some time this week and let you know how it went! :) Must pick up all the seasonings first. :)
